Winter Activities in Southern Georgian Bay

Always something to do!

There are so many amazing winter activities that you can experience in the Southern Georgian Bay area that you will want to spend tons of time here! Here are some examples:

Downhill Fun: Our area is home to some of the best skiing, snowboarding and tubing in Ontario. There are several public and private resorts that offer hills for those from beginner to experienced, as well as equipment rentals, lessons and restaurants. You can check out their offerings on each of their websites: Blue Mountain Resort, Craigleith Ski Club, Alpine Ski Club, Osler Bluff Ski Club, Georgian Peaks Club, Beaver Valley Ski Club, and Devil’s Glen.

Cross Country Trekking: If traveling cross country is more your speed, you’ll want to consider cross country skiing, snowshoeing or fat biking at one of these fabulous locations: Highlands Nordic, Scenic Caves Nature Adventure, or Wasaga Nordic and Trail Centre.

Spectacular Winter Hiking: The Bruce Trail and it’s many Side Trails provide the opportunity to get out into the snowy wilderness and search for animal tracks and winter birds. If you prefer a trail with fewer elevation changes, the Georgian Trail will take you from Collingwood to Meaford on a flat, open, limestone trail.

Shopping: The historic downtown areas of Collingwood, Thornbury and Meaford have some unique and interesting shops nestled into some of the most beautiful historical buildings. Be sure to stop into one of the quaint cafes for a hot chocolate to warm up!

Craft Beverage Tour: Collingwood is home to an incredible mix of Craft Beverage producers – Collingwood Kombucha Company, The Collingwood Brewery, Black Bellows, Northwinds Brewhouse & Eatery, Georgian Bay Spirit Co., Freshwater Distillery, Heretic Spirits and Side Launch Brewing Company – to name but a few. Stop in and check them out to sample and purchase their products.

Seasonal Recipe

Blueberry-Lemon Ricotta Pound Cake

Ingredients

  • ¾ cup granulated sugar
  • 5 tablespoons unsalted butter, at room temperature
  • 3 large eggs, at room temperature (see Tip)
  • ¾ cup part-skim ricotta cheese
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice plus 1 teaspoon, divided
  • 1 teaspoon vanilla extract
  • 1 ½ cups white whole-wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups fresh blueberries
  • 2 tablespoons packed confectioners’ sugar

Directions

  1. Preheat oven to 350 degrees F. Coat a 9-by-5-inch loaf pan with cooking spray and line the bottom with parchment paper.
  2. Beat sugar and butter in a large bowl with an electric mixer on medium-high speed until creamy. Beat in eggs, one at a time, until fully incorporated. Reduce the mixer speed to medium-low and beat in ricotta, lemon zest, 2 tablespoons lemon juice and vanilla until just combined. Sprinkle flour on top, then evenly sprinkle baking powder and salt over the flour. With the mixer on low speed, beat until almost combined. Add blueberries and gently fold into the batter. Transfer to the prepared pan.
  3. Bake the cake until starting to brown around the edges and a tester inserted in the center comes out clean, about 1 hour. Let cool in the pan on a wire rack for 20 minutes. Run a knife around the edge to loosen the cake, then invert it onto the rack. Carefully turn it right-side up. Let cool completely.
  4. Clean the bowl, add confectioners’ sugar and whisk in the remaining 1 teaspoon lemon juice until smooth. Brush the glaze on the cake.

Tip

Room-temperature eggs make cakes fluffier. Here’s a quick trick–place them (in the shell) in a bowl of lukewarm water for about 5 minutes.

    Interest rates may have peaked – is it time to jump into the housing market?

    After the Bank of Canada on Wednesday gave its clearest hints yet that its interest rate cycle might have peaked, some real estate experts are expecting hope for lower borrowing costs will set up a busy spring housing market.

    The Bank of Canada held its benchmark interest rate at 5.0 per cent for the fourth consecutive time on Wednesday, with governor Tiff Macklem saying that conversations at the central bank have shifted from whether rates need to rise higher to how long they need to stay at current levels.

    Macklem was asked by reporters for a timeline for rate cuts, but he pushed back, arguing he didn’t want to give Canadians a “false sense of precision.” The bank’s rate path is still dependent on inflation, with additional hikes not off the table if price pressures reignite.
